I would really love a copy of the ginger cheesecake recipie in Lora Brody’s Growing Up On The Chocolate Diet. My copy is in a box in storage in Beloit. I can’t seem to find it via the internets and (sigh) NONE of my local libraries has a copy! Help me, Obi Wan Kenobi!

Ginger cheesecake

Butter

½ cup crushed ginger snaps

½ cup crushed chocolate wafers

½ cup melted butter

2 pounds cream cheese, at room temperature

½ cup heavy cream

4 eggs

1½ cups sugar

1 teaspoon vanilla extract

2 tablespoons freshly grated ginger

1 cup finely chopped candied ginger.

(.Preheat oven to 300 degrees.

2. Butter the inside of a metal cheesecake pan eight inches wide and three inches deep. Combine the crushed ginger snaps and chocolate wafers and mix with melted butter. Press the crumbs into the bottom and halfway up the sides of the pan.

3. Place the cream cheese, heavy cream, eggs, sugar, vanilla and grated ginger into the bowl of an electric mixer. Beat

the ingredients until thoroughly blended and quite smooth. Mix in the chopped ginger.

4. Pour the batter into prepared pan and shake gently to level the mixture.

5. Set the pan into a slightly larger pan and pour boiling water Into the larger pun to a depth of two inches. Do not let the edges of the pans touch. Bake in the preheated oven for one hour and 40 minutes. At the end of that time, turn off the oven heat and let the cake sit in the oven one hour longer.

8. Lift the cake out of its water bath and place it on a rack to cool at least two hours before unmolding.

7. To unmold, place a round cake plate over the cake and carefully turn both upside down.

Yield: Twelve to 14 servings.

Close enough, thanks. I made this for a friends party once and someone claimed it changed his whole life. Seems like s good reason to make it again today.
