Todd,

Yeah. I'm going to start with some cheaper stuff, though ... probably some generic O-1 from Portland. The Sheffield steel is expensive, and I don't want to buy it until I know what I'm doing.

Josh,
Mike uses mostly 440C. He also uses 01, D2, A2.

The answer to the book question is Boye's Step-by-Step Knifemaking, which I got as a Christmas present. Fantastic book, lots of illustrations and diagrams, and instructions specifically for kitchen knives.
