Good point on the newsletter.

Kathy, mine is called a jerky maker too so that would probably work. Although I do remember that my dentist says that he loves corn nuts, jerky, and ju ju bears. I don't think I need to buy him a new truck.

Great idea to dry fresh produce that you will not have time to use. I have some green beans that fall into that catagory - do you think I could dry those for soups?

I have tried drying beans, and not been too happy with the results. One problem is that if there are large seeds inside, when you dry them it will be like regular dried beans, and you will have to cook them a long time to soften them, thus destroying the "green" part. You would have to pick them very early, while the seeds are very small, which I have a tendency NOT to do late in the season!
