Thanks! Mostly I'll want to use it for high heat; I imagine the electric stove does pretty well at low heat.

I find I don't miss gas (except during power outages) with having an induction range. Induction is instantly responsive in cooling down and faster to heat up than gas. Burner power matters though, and you get dramatically better results using all clad and other quality pans than using cheap pans with an added on induction base. The difference is water boiling in 90 seconds vs 4 1/2 minutes. The only thing I miss a bit is charring peppers and warming tortillas.

I have nothing to add to the induction/portable stove issue. However my first thought at the new kitchen pic was "what is fuzzy going to do with all that counter space and cupboards?" A serious change for sure. Good luck!
