Great review, nice omelet too. Makes me wish I needed a new pan. My old Cuisinart Hard Anodized is still going strong. |

I have no non stick left....but will need to carry a magnet with me to find one that will work on the induction. I miss my 9 inch non stick. |

Ilene, Is there any such thing as a nonstick pan that works with induction? I guess there could be steel cladding on the bottom. Those are liable to be expensive pans, though. |

Swiss Diamond makes induction capable versions of some of their pans. They are awesome, but $$$. Henckles makes one too, but I'm not keen on it (it's not that nonstick). I also found some Jamie Oliver ones but they are slow. |

Yeah, slow. They are cast aluminum with a metal base, and take forever to heat up. Boiling water in the saucepans is way longer for the same volume of water as my All Clad stainless ones (90s vs >4 minutes for 4 cups), and the frypan takes preheating. In contrast, my stainless pans cannot be left to preheat or they overheat and instantly burn any fat you add. I suspect the mental base is really thin. They eliminate all benefits of the induction burner. They are made by T-fal. The Swiss Diamond and Henkles ones are much better, but only the Swiss Diamond nonstick is actually nonstick. The Henkles has a ceramic-ish finish and sticks. |
