I learned to make pasta by hand and still do most of the time. I got my Atlas at a garage sale and use it mostly for lasagna.

I have a pasta extruder from KA and use a recipe from Leite's culinaria. I use 00 flour. Turns out really well.

Is yours the vertical extruder or the food grinder attachment? We have the latter and have always had trouble with the extruded pasta immediately sticking together.

Yes, I would like to know which attachment is the best, also...the KA that comes with 3 metal parts? Or?

Hi Pete,
I have the extruder kit that has several disks for different shapes. Bucatini, macaroni, spagetti and a few other curly type shapes.
It's fun to use and easy enough to clean. I'm going to try some of the other recipes posted here.

I bought my mom that one and she really likes it, FYI that on ebay seemed to be the best deal going, lots of sellers selling them far cheaper than in stores. I have 2 manual machines that I've yet to use. One was a friend's grandmothers and she was giving it away and one was my aunt's and it came up to my place from NY when they sold her place. I want to try and make pasta soon.
