Fuzzy,

I was hoping that you would tell us about the steel that you fashioned. Many of us would like to know what kind of steel, dimensions, weight, how did you finish the surface and edges, how did you season and more.

Tim, he has a picture/description here: viewtopic.php?f=15&t=2625&p=35924&hilit=pizza+steel#p35924

Fuzzy, read that aloud to my husband who suggested a good friend who has an aluminum company, they make all sorts of things....I offered to be his test market. ;-)

That post describes most of it.

For the other questions: I removed the rust and ground the edges first with a wire brush angle grinder, and then with 200 grit sanding blocks. Then I washed it with soap and water.

The only seasoning I gave it was a 450F trip through the oven. I mean, what else does it need?

Thanks Fuzzy,

Now to find a piece of scrap metal and get out my plasma cutter!!!

Note: Use your wood pizza paddle with cornmeal; it won't stick to the fresh dough.

I did a flax oil seasoning on my steel the other day. It had gotten damp in spots and had a touch of rust. It looked great after I seasoned it. Thin coat, 1 hour on 500.

I love it for seasoning cast iron and my steel. Andris Lagsdin has a YouTube video on seasoning his steel. It was exactly what I would have done anyway.

Becca,

Yeah, I got it for seasoning cast iron, especially after my MIL left her peanut brittle pan on the stove for 8 hours (yes, really).

I hesitate to season the iron plate, though, because come summer I'm going to be cutting another 1.5" off it with a torch, and will have to regrind it. I might wait until after that.

My hubby took the cooled steel out of the oven this morning and set it on a wet counter with wet soapy dishclothes on top to loosen the baked on pizza.

I found it about an hour later, rust already developing. I dried it quickly, left it on the stove for the day and now have it in the oven, thinly coated on both sides with canola oil as don't have flax oil. I chose 200 but will up it to 500 and see if I don't have to resort to sanding it down.
