 Post subject: Copper Candy Kettle

When you go to a fudge shop, you see the candy makers using Large Copper Pots on top of some pretty large burners making fudge or other candy. When the candy has reached the proper temp, they pour the fudge onto marble slabs. Does the copper pot retain enough heat to keep cooking the fudge once it is removed from the flame or does it cool off enough to give the candy makes enough time to pour off the large amounts of fudge that they make at one time?
