Ok, I was enabled to buy these...(the regular NYMSC not the for 2 version).

Lisa do you have favs from the southwest cookbook?

Also, green chiles are not sold here except for in cans. Do you think I could sub canned green chilies in these recipes?

Hi Carey,

I will dig it out tonight and look and send you some ideas. One thing about that book is that it has a bunch of recipes were stage one is made in the crock and stage two is baked or otherwise further cooked, so read carefully so you don't end up with half a dinner. (Not that I would ever do that... :| )

I use the canned green chilies often, so you should be okay. It changes the taste and texture (vinegary and soft vs green and crisp) but it is generally an acceptable sub for the crockpot where things cook a long time anyway.

Canned chipotles are another good substitute for fresh jalapeño chilies. I use about 1/2 to 3/4 the amount called for since chipotles tend to be spicier.

I can't get fresh or canned but have found that roasted green peppers plus green Tobasco works ok.

I finally remembered to look at the Southwest Slow Cooking book and here are some dishes we liked:

Tortilla Soup
Drowned Egg Soup
Spicy Cashew Chicken
Pork Adodaba

I have been meaning to try the Turkey Stuffed Peppers but I haven't gotten around to it.

Thanks Lisa!

I'm assuming that when they say "green chiles" they mean the fresh version of the mild green chilies that come in a can, and not jalapeño's right? I can get jalapeños, serranos, poblanos and fresco peppers here fairly reliably. Plus canned chipotles. That's about it.

I might try your green pepper and tobasco trick, Mary!

Glad to help! Yes, when they say green chilies they mean the canned ones. If they want a specific varietal like ancho or poblano they specify, which makes it a lot easier.

Since I had the book out my hubby wants me to make the pork adobada next week. :)

I am so mad. I forgot to plug my crockpot in this morning. I turned it on, I just didn't plug it in. I had lamb shoulder chops i it with all kinds of good quality ingredients for a nice long braise. That is the first time that has happened to me. >.<

And now we are ordering pizza. NOT what I had in mind.

It sat out on the counter for 10 hours, so I had to throw it out. No way could we eat it - raw lamb, homemade beef stock, lots of veggies, potatoes, wine, etc. It was 77 here today, too, so smack in the danger zone.

I will completely admit for a *very* brief second I thought "I wonder if boil the @!$# out of it for 30 mins, maybe I won't give us food poisoning." But, I'm not that stupid. :) We had pizza.
