I have the Fagor Duo 4 qt and 8 qt set. Both sizes work well, but I'd go with the bigger size if you only have room for one, as you can only fill them 2/3 full.

Carey,

Oh! That's important, I didn't know that. In that case, I probably want a 6qt.

I have two, both Canadian brands that you probably can't even get there even if I was recommending them. They work, but were cheap and if I was to buy one again knowing know how much I use them then I'd buy better quality. One is ss and the other is aluminum, and the ss is waaaayyyyy easier to clean. (duh)

I'm trying to convince hubby to replace our water softener now that I am back to work, I'd love a new rug too now that we are past the toddler stage. Paul, let me know if you are ever in the GTA, you can give my husband pointers.

Fuzzy,

If you are looking at them in person, most will have a max fill line marked inside, so you can see for yourself how much room you'll have to work with. For things that foam, like beans, the instructions on my pot say to go no more than half full, as they can otherwise clog the release valve. I thought the 8 qt would be huge, but for soups, stews and the like, it's a good size. Sometimes even a bit small (like when I'm making stocks from carcasses).

I found this site helpful on explaining what to look for in a PC.

Josh, for just Steve and I, I never use anything below a 6 QT. I inherited all my pressure cookers except the 10 qt. I bought that one because if I wanted to make double recipes to freeze, I needed the extra room and as was mentioned below, you can just not fill it up to the top. You'll love the extra room for beans (I've never made Cuban black beans without a pc) and of course CI's pressure cooker risotto, love the butternut squash one. The link Jean provided is right on in my experience.

I have the Cuisinart Electric. I use it all the time for quick stocks and dry beans. I deconstructed two ducks yesterday (legs for confit, breasts to sear) and I boned both ducks right into it, added some veggies and in 2 hours I had stocked that gelled as it cooled. It makes good lamb
shanks and flanken right from the freezer but I haven't mastered how to get the mouthfeel of long braised and cooked down sauces.

It is 6 quart but I find that a good size for the us.
