Fuxxy,

Actually that was my FUBAR. I do have to learn to type with the light on the keys. Sorry.

I ordered the baking steel (could not find anyone locally to make although honestly did not look all that hard) and used it last night.

Oh. My. Goodness.

Even my husband couldn't stop talking about what a difference that made to the crust. Grainy picture attached, this is after I pulled them from the oven.

My mom's significant other works in a machine shop, so I now have a very heavy, large baking steel that only set me back $40. Not quite scrap metal price, but not too bad. Now I just need to season it--flaxseed oil, here I come. Can't wait to try it!

Jean,

Wait, are you putting perforated pizza pans on top of the steel? Huh.

Fuzzy, no. I didn't have a peel (just bought one this weekend, yay) and used the pizza sheets to pull the pizzas out of the oven with and to set aside until ready to slice.

Jean, which steel did you get? I'm looking for a birthday gift for my daughter and I think she'd really like this. I've read this post twice and can't figure out which one you chose.

Fitzie, I bought the 1/4 inch 15 pound model for $79 and added the case since it's cheaper when you order it that way and I'm not keeping it in my oven so this makes storage easier. They've since added the King Arthur Flour version with a built in handle (I don't like that one since it would just encourage me to grab it hot!) and are coming out with one with a griddle version although it will likely be about $60 more, but you might want to wait to order that one.

Edit to add the link since I forgot - http://bakingsteel.com/shop/baking-steel/
