Yes, however it only begins at 300F.

Wino,

Maybe try some oil in the containers instead of water? And maybe add it at about 20º under the setting you are testing for, so it won't take long to get up there?

Here's the physics: as the oven gets hot and dry, the water is evaporating, which lowers its temperature. A pan of water in the oven will never reach the same temperature as the oven for this reason.

Use oil instead, as Dave suggests.

Hi,

The Harvard Science and Cooking Course has a effective way to calibrate using a phase change on sugar which melts at 366F. I followed this with a verification of the cycle my oven.

Phase Change Calibration:

Code:
1) Preheat your oven to 350F (177˚C).
(2) Place the granulated sugar in an oven proof dish or on aluminum foil
(3) Place in oven for 15 minutes
(4) If the sugar doesn't melt, raise the temperature of the oven by 10F (5˚C) and repeat the experiment.


I found my oven running hot by 15 degrees. I also found slight melting a the lowest temp after leaving the sugar in the oven.

The oven probe documented a 23 degree cycle over time. I then talked to my repair shop who said that cycles varied up to 25 degrees. They also mentioned that some new ovens have very low cycle changes.

The best way I have ever found to audit the the performance of an oven is to bake a big batch of Chewy Sugar Cookies. If they are done on time and evenly browned, the oven is doing its job.

Water can also be used. Preheat the oven to 350º for at least 30 minutes. Place 1 cup\237 grams\8.3 avdp ounces of 70º water in a two cup Pyrex measuring cup and place it in the middle of oven rack that is in the middle of the oven. After 15 minutes the temperature of the water will be between 149º and 151º if the oven is accurate.

A probe thermometer can provide some entertainment too. Place the probe in the center of the oven. I feel less silly if the probe is stuck through a potato. Set oven to 350º, hit <START> and watch the probe display for next hour. You can learn the actual preheating time of your oven, the programmed cycle for the burner and gather some information about the precision of the oven display.

I just spotted Whirlpool's "AccuBake Temperature Management System" with "6th Sense Technology". It takes a pretty sizeable manure fork to hold all of that in one appliance.
