Heston B, in his "In Search of Perfection" tv series was very pro for the rougher texture produced by metal dies compared to plastic or teflon coated dies. Like others, he felt the pasta produced held the sauce much better. While some dies may wear out in a factory setting, I have a hard time seeing even Amy push enough pasta through a metal to cause negligible wear in even decades of use.
