Vegetables get cut with a knife unless I want a puree. Garlic goes through the press unless I want minced garlic. My knife-skills are only mediocre, no matter what school I went to. Bakers do much less chopping and such.
Looking at what professional kitchens do is only moderately useful for people cooking at home. I can feel my thought process changing when I go into production mode for some large volume project.

Thanks for asking. He's busy with two teen girls, and working long hours. However, he says hello to everyone and will join up when he has some spare time. For anyone who doesn't know, OTG (OnTheGrill) is my brother (EB is my sis)!

Tell him we say "Hi" :mrgreen:

Also, tell him I say to watch EB when she is at your mom's, I've heard she is a looter. :lol:
