I haven't had good luck with high heat stir fry using a flat bottomed wok on my induction burner. Though it will boil nearly a gallon of water in my tea kettle slightly faster than on my gas range (unless I turn the heat up to where the heat is coming up the sides of the pot!), I found that even if you leave the wok on, and heat it to smoking hot, the heat is sucked out of the metal much quicker than it can reheat, since the heat is only coming from that small disk on the bottom.

What would probably work, though I haven't tried it, would be a cast iron wok, since that could be heated up, and absorbs much more of the heat, so it could stay hotter, while doing the SF. I only use my cast iron wok for dishes like Thai curries, so that they can simmer more evenly, but I'm sure it would work for that.

Nah, I don't really want a cast iron wok; I used to have one and gave it away. For stirfries, the wok needs to heat and cool quickly.

Thanks for warning me off the induction burner, at least for this purpose.

I'm interested in what brands of induction ranges y'all have. I am actively in the market for one, and don't really know where to begin. The online reviews point to Frigidiare, which sounds a little dicey. I've never thought of them as outstanding.

The fancy stuff like Wolf/Viking are out of my budget. I am more in the market for Bosch - GE - KitchenAid - Samsung, etc. What can you recommend?

Surprisingly, Consumer Reports only has 3 Induction ranges rated. Two are Frigidaire - one recommended, but number 4, and the other in last place. A GE was in first, but not cheap ($2300), but in second was a Kenmore, at $1400. When I go to my PC, I'll see what I can copy, and send you a PM
