Thanks for the assortment of reasons!

Amy, I didn't necessarily think that this recipe was originally about not kneading; I can see how the technique involved would result in different development of gluten. But the editor's description emphasized how little kneading was required, which seems incidental to me.

For me: (a) I don't make bread often enough to try experimental techniques, (b) with 20 years of ceramics, kneading bread is quite easy. Once you've wedged (kneaded) 300lbs of new-made clay, a batch of bread can be kneaded with one hand.

That also makes me wonder something: maybe a many people (not the ones on this board) hate kneading because they never learned how to do it right, have counters at the wrong height, etc. More youtube videos needed! Also, I imagine JesBelle is right that a bunch of people hate to get their hands covered with sticky dough.

FWIW, most white-flour breads can be made with kneading the dough in the bowl, for 5-10 minutes. It really doesn't take more than that.

Now, if only someone can give me a recipe for 100% whole wheat bread which does not require 20-30 minutes of kneading, or additives, without producing a brick. Oh, well, I "knead" the exercise.

I have just enough strength to knead, but I make sure to rely on the strength in my arms more. I have no grip-strength left and my wrists are often sore. I only have myself to blame -- way way too much gaming. Actually, the thing I had to give up doing by hand is whipping cream. My wrists will be screaming after 20 seconds.

I hear ya. I still do a lot of stuff by hand, but the hands hurt a lot faster than they used to...

my arm and hand strength are ok, it's the knees and back that start to complain.
