I thought I'd tried almost every type/technique of dinner roll recipe, and I've sung the praises of any number of them them on this board. However I must report that I was wrong. Dead wrong. This new CI recipe (that I took a picture of on my phone waiting in line at Costco) may just be white rolls nirvana. We just couldn't believe how delicious and light they are, even the next day. And the prep really was easy, even with the extra little rolling step.

If anyone wants to give them a whirl, there's a free video with ingredients here https://www.cooksillustrated.com/recipes/8660-fluffy-dinner-rolls. (The flour weight specified in the recipe in the magazine is 11 oz., not including the 3T for the paste.)

Emilie, Somehow I skipped over this recipe in the magazine; probably wasn't needing to make rolls at the time.
But these look really fantastic! Leave it to CI to come up with a life changing recipe.
Thanks for bringing it to our attention, otherwise I would have missed out.
I am definitely going to make these.

I know, Linda! Leave it to the Japanese I guess and then CI having the good sense to investigate the method. I just had one with some jam on it for breakfast (after working for 3 hours to get one car unstuck/completely out of our #*&$! driveway) and it was almost as soft and delicious as when first baked 2 days ago. And that was without warming it at all.

And FWIW, I accidentally cut the dough into 16 portions and it worked just fine. I'll be making them again soon and freezing for later. Double yum :)
