 Post subject: passover pie crust that actually tastes good

Anyone? I have a recipe for coffee toffee pie from Blum's in San Francisco which is really good, but needs a different crust for passover. I'm thinking something with nuts and chocolate which is already part of the original recipe (which uses pie crust mix).

Nancy,

Sorry, never even tried to make pie during passover.

However ... couldn't you do a chocolate cookie crust using crushed passover cookies? You might even be able to make a graham cracker crust using whole wheat matzoh, if you added enough butter and sugar ...

I've not made this but had it in my living cookbook. I've seen several recipes for almond and pecan crusts that don't use flour. I would think that many of the gluten free crusts would be good. KAF has a gluten free recipe as well.

Thanks guys! Alina, I saw this a long time ago and probably tore it out of the magazine. Josh, I like the idea of chocolate cookie crust. Hmmm :ugeek:

Sorry Nancy,

My pie crust recipe would pretty much hit every prohibition (lard, butter, wheat flour). Tasty, but not at all helpful.

I made a good pie crust with Arrowhead mills GF flour mix. Just made it like a regular crust, with the 3:2:1 ratio. It could have used either a bit more fat or a bit more water, but it worked, and tasted ok. I suspect that most GF stuff is ok for passover.

So I made a key lime pie with a pecan shortbread crust made with cup4cup flour (had to mess with regular sugar vs. the confectioner's in the recipe, because there was already cornstarch in the flour. I know that rice and corn are often frowned upon for passover, but I went with this flour anyway (I really hate the taste of matzah meal) and cornstarch and corn syrup. I made too many desserts as usual: CI macaroons, key lime pie, chocolate and chocolate chip ice creams, Marilyn's toffee, 2 types of meringue crisps and a flourless chocolate cake cream roll filled with whipped cream. There will be 21 people and I was put in charge of desserts (fox in charge of the henhouse, :shock: ).

While everything else came out well, the crust to my pie, not so much. Next year, no pie crust :mrgreen:
