Post subject:  Cream Cheese Frosting for Cupcakes

My nephew's 40th Birthday is in a couple of weeks and I plan on making Carrot Cake cupcakes and bringing them to work. I would like to make my usual Cream Cheese frosting, but I would like to have it bereally fluffy for the cupcakes. Will Cream Cheese frosting whip up to what I want or do I have to add something to it to make it fluffy? I have pastry bags and tips and I want the cupcakes to look like this one.

Just add air. A recipe with butter, cream cheese, 10x sugar and vanilla can whip up fluffy enough to pipe.

I am not sure whether it would be stiff enough to hold the peaks pictured.

I think CC has a cream cheese miracle frosting. It would be fluffy.

I have not found CC frosting to pipe super well. It never looks sharp and crisp like regular buttercream, and tends to flop and slide off things easily (especially if it gets warm). My best advice would be to make it more stiff than usual (I typically add extra sugar in), chill it well before piping with it (I chill in a bowl, then stir to loosen a bit before loading the bag) and to keep the cupcakes chilled post piping. The taste more than makes up for the decorative limitations though. Plus, with a large star tip, everything tends to look pretty good even if it's not quite as pretty as the one you posted. You might want to do some test ones first though to make sure that you are happy with the end result before the big day.

Thanks for the link. I think I will try the recipe for the Cream Cheese frosting. It looks like it won't be too sweet for the amount of frosting that I want to put on the cupcakes.
