Post subject:  Gluten Free Flour

A while back there was a discussion on gluten-free flour. I saw a recipe of muffins I wanted to try, and it called for it. They recommended Bob's Red Mill. I looked at the ingredients and saw that I have most, so I went looking for a mix I could make. I found this site, and thought it might be useful to others. I love the Excel spreadsheet that does the proportion calculations. Here's the link to the site, download for the spreadsheet is half-way down the page.

I am going to make up a batch and will report the results. Of course instead of healthy muffins, I think I will try an "impossible" almond joy pie. I mean, if I am going to all that trouble ....

I made gluten-free brioche for a client over the holidays. The general consensus amongst Darcie, Andy and myself is that for gluten-free bread, it wasn't bad. I used Thomas Keller's cup4cup.
