Does anyone have a killer recipe for grapefruit cake?

I'm developing a dessert for a party next week, and I want to use up the yuzu ice cream I made for the event last weekend. I'm thinking a grapefruit cake with caramel sauce and yuzu ice cream, possibly topped with port-macerated cherries.

I'd like to do individual cakes, but will figure that out based upon the recipe.

Anyone?

Amy, I don't know if you are aware, but anybody taking statin drugs to control cholesterol CANNOT eat grapefruit in any way shape or form. I don't know what it does to you, but my friendly doctor makes me think I might keel over dead after just a whiff of it. I dearly love it and miss it.

I did not know that, I take one and had no idea. I just tossed a grapefruit a couple weeks ago because I didn't eat it in time.

I had no idea either. WOW, good to know. Are patients who are taking statins told this?

If so, I might offer dessert options.

I just got off the phone with my client, and my favorite words were spoken: "budget is not a consideration."

Amy, Krysta Wilson has a really good citrilicious bundt cake i Kiss my Bundt. It calls for lemon, lime and orange. You could up the lime to make it tarter if you wanted. I love her cakes. I have a bundt cupcake pan and plan using it next time I make it. Let me know if you'd like the recipe.

It is not just statins that interact with grapefruit. There are a whole slew of other meds (over 80) that interact negatively as well including Allegra, Buspar, some antibiotics, etc.

I have never even heard of a grapefruit cake, although I like that idea. I really love CI's lemon pudding cake, that would probably adapt well to grapefruit. I am trying to decide if the pudding-y bottom would be amazing or too mushy with a caramel sauce.

Yes. People who take statins are forewarned about grapefruit. There are yellow stickers on their med bottles and quite a lot in the side effects notice that come with all drugs nowadays.

when I was on blood thinners for a few months I was told by the pharmacist to not have grapefruit. My parents can't have it either although they are on different drugs than mine were.

Hmm, I think there's one from a restaurant in LA, I think. The Derby? I'll google it. I'll also keep looking its supposed to be "famous"

Grapefruit Cake
Hollywood Brown Derby
Disney-MGM Studios

Yield: 4 to 6 portions

Ingredients:

1 1/2 cups sifted cake flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup water
1/4 cup vegetable oil
3 eggs (separated)
3 tablespoons grapefruit juice
1/2 teaspoon grated lemon rind
1/4 teaspoon cream of tartar

Method:

1. Preheat oven to 350º F. Sift together flour, sugar, baking powder, and salt into mixing bowl. Make a well in center of dry ingredients.

2. Add water, oil, egg yolks, grapefruit juice, and lemon rind. Beat until smooth.

3. Beat egg whites and cream of tartar separately, until whites are stiff but not dry.

4. Gradually fold egg whites into the cake batter, folding gently with a rubber spatula until just blended. Do not stir the mixture.

5. Pour into an ungreased 10-inch cake pan. Bake at 350º degrees for 25 to 30 minutes, or until cake springs back when lightly touched with a finger. Invert pan on cake rack until cool. Run spatula around edge of cake. Carefully remove from pan. With a serrated knife, gently cut layer in half.


Grapefruit Cream Cheese Frosting

Ingredients:

2 six-ounce packages of cream cheese
2 teaspoons lemon juice
1 teaspoon grated lemon rind
3/4 cup powdered sugar (sifted)
6 to 8 drops yellow food coloring
1 one-pound can grapefruit sections (well-drained), reserving 2 tablespoons of juice OR 3 fresh grapefruits, peeled, sectioned, and drained, reserving 2 tablespoons of juice.

Method:

1. Let cream cheese soften at room temperature. Beat cheese until fluffy.

2. Add lemon juice and rind.

3. Gradually blend in sugar. Beat until well blended. Add food coloring.

4. Add reserved grapefruit and blend into frosting.

5. Divide the frosting evenly into two bowls. Roughly chop 2/3 of the grapefruit sections and add them to half the frosting. Spread this mixture on the bottom half of cake. Top with several grapefruit sections. Cover with second layer of cake. Frost top and sides. Garnish with remaining grapefruit sections.
