Jean, Just use a thermometer when browning the butter, take it to 280-290°, then quickly dump it into a metal bowl to stop the temp. from continuing to rise. I figured this out years ago, after burning a couple batches of nam prik pao, then applied it to butter, next time I browned it. Never blackened any since! |

I love Jacques Torres' chocolate chip cookies. I think we discussed these somewhere on this board or tobb. Leites Culinaria has the recipe (I think its under the name NYT ultimate chocolate chip cookies). They have sea salt sprinkled on them and are "aged" in the fridge for 24-36 hours before baking. Humungous cookies and really good. |
