I'm planning on making the vodka dough today but won't be able to use it until Wednesday. Does anyone know if I can keep it chilled in the fridge for 4 days (recipe says up to 2 days) or do I have to freeze it? And what is the down side of chilling the extra 2 days?
Thanks
Nance

I've noticed that the dough gets an off color and flavor after more than a couple of days. I'd just freeze it right away. It doesn't take that long to thaw and then you don't have to worry about it.

Hey Nance,
I rolled out my dough after chilling and put it in the pie plate then froze it last week (used Pam Anderson's CI all butter recipe). Of course as I recall, in NYC you might not have the room in your freezer. We'll see how it turns out.

Ah Nance, interesting idea! But since I've already frozen it I'll just take it out Tuesday night and refrigerate until Wednesday.

And as an aside, I would never attempt to do this baking in my apt with 1 foot of counter space. I'm upstate where I have ample room and freezer space. Ah, the country... ;)
