I've always wanted to make cannelés, and last year bought some aluminum molds on sale. (Yes, I know copper is traditional, but I'm not shelling out that kind of money.)

I've never been thoroughly convinced about the "perfect" recipe so just never got around to it. Earlier this week I came across people raving about Anne Willan's so decided to give it a go this morning.

Totally delicious.

Wow, those look great.

Kris is very fond of canneles; gets them from the French bakery in Cole Valley. I suspect yours would be better ...

I had some canneles in France and they were not what I expected at all, and I mean that in a very good way. I'm a huge custard fan, it was like creme brulee cake almost. I'm sure it is not something I would ever attempt at home. go you!
