Does anyone have a great sponge cake recipe? I need to make two layers in either 8 or 9" rounds.
I have the CI Foolproof Sponge Cake in my files, and am wondering about that one.

I want to use the cake layers for The Mexican Chocolate Icebox Cake, one of my favorite recipes. I usually use store-bought ladyfingers, but they suck, and I don't really feel like making my own at this point.

Hi, here's my family recipe for Panetela which I think is a sponge cake. It is what we use to make Panetela Borracha. Hope it works for you.

EXPORTED FROM LIVING COOKBOOK

PANETELA CORRIENTE - BASIC SPONGE CAKE

Can use for drunken cakes, or peach cakes.

Servings: 8

Oven Temperature: 375°F

5 x-large eggs (6 large) whole separated
1 cup sugar
1½ cups bleached AP flour
2 tsp. baking powder
¼ tsp. salt
1 tsp. vanilla

Preheat oven to 375°

Grease and flour two 9" Pyrex cake pans.

At high speed, beat egg whites to medium peaks. Add sugar, continuing to beat to stiff peaks.. Add egg yolks, one by one at medium speed. Add vanilla and blend.. Fold in dry ingredients. Put battered in prepared pans. Bake at 375° for 25 minutes until pick comes out clean. Cool on rack for 10 minutes. Invert on rack and cool completely.

Preparation Time: 15 minutes Cooking Time: 25 minutes Inactive Time: 35 minutes Total Time: 1 hour and 15 minutes

By the way, do you happen to have a good recipe for Natilla? I used to love the Natilla from Victor's Cuban Cafe in NYC!

My mom made it for my dad all the time. I'll have to look in her cookbooks and recipes to find the one she made. I've not made it myself since I left home. I am more of a flan person. I'll look as soon as I finish with Flour. i borrowed my daughter's electronic copy so I only have it for 14 days. When I find it, I'll post it.

BTW, panetela is my favorite cake. I like to eat it plain (not fond of super sweet stuff as a rule) or even slightly toasted pieces. Of course my favorite is the Borracha made with my mom's simple syrup and Bacardi rum.
