I have a big old hunk of chocolate that I want to use in cookies...so what is the best way to chop it into nice, cookie-sized hunks? Just go for it with a big knife? I'm afraid if I put it in the processor, it will end up in tiny pieces. Any advice?

Your first instinct was good...just get out your chef's knife and go for it.

That is what we do too. We get chocolate for ice cream and for candy in 5 kilo bars. I have 2 of the bars coming for the Christmas season.

That is how I do it too. I was hoping for a brilliant solution though, as I HATE chopping chocolate. I have found some high quality chips though and will give up chunkiness for convenience at times. Who am I kidding. ALL the time on the very few occasions that I do something sweet.

There is a tool for ice-carving that works really well for breaking down big hunks of chocolate, called a five (or six) prong chipper.
here is a link.
As you can see, they are pretty cheap.

Becky, I like that tool! Looks like something out of a Stephen King novel.

I have that tool, but still usually pull out my chef knife.

Looks grisly. I was hoping for something involving a ziploc bag.

All,

Kris uses a tool like the one Becky linked. It works really well, but you want to use it on top of a surface you don't care much about -- you're liable to gouge it.
