 Post subject: Do you have a really good vanilla frosting recipe?

I'm in the process of moving and all my books and recipes are packed up..and I need to make a birthday cake tomorrow... Devil's food cake with vanilla frosting has been requested (although I could cheat on the vanilla and put in some kind of flavoring.) I found my cake recipe in an old email to someone, but need the frosting. Anyone have a special one they love? Thanks!

You can check on the back of the confectioner's sugar box or bag for the traditional butter, sugar, vanilla buttercream. Otherwise, you can try Cook's Illustrated or epicurious websites. I personally love chocolate cake with cream cheese frosting. Take care

i love boiled frosting. like this one which I found on Chowhound, it looks right to me

4 tablespoons flour

Mix flour with milk. Cook over low heat until thick, whisking the entire time. Set aside to cool. Cream butter and sugar until fluffy. Add vanilla and cooked milk mixture slowly. Beat until it feels like whipped cream.

She's serious about whisking the entire time--i wasn't paying attention and had to throw out my first milk-flour attempt. Also, I use lactose-free whole milk in this and all my baking that calls for milk--it's sweeter and I think it makes cakes more tender.

This recipe does NOT taste like cooked flour and would be fantastic with citrus, coffee or chocolate flavoring, as well as with the vanilla.

I've never tried this, but it's the CI recipe from June 2010. Hope it helps.

Creamy Vanilla Frosting

1/2 cup sugar
2 egg whites
pinch salt
1 1/2 sticks butter, cut into tablespoons and softened
1/2 tsp vanilla

Place sugar, egg whites & salt in the bowl of a stand mixer. Set the bowl over simmering water, and whisk until it's foamy & reaches 150F.

Move the bowl to the mixer, and use the whisk attachment until it looks like shaving cream and cools slightly, 1 to 2 minutes. Add butter, one piece at a time, until smooth & creamy. Beat in the vanilla.

Makes 2 1/2 cups. They listed this for frosting 12 cupcakes, so you may have to double it for a layer cake.

Thanks, everyone! I've been trying to get on TOBB for days, but it's been down a while. I will try these. A question: I always hated the sticky, boiled frosting my mom used to make, so that's why I've stayed away from any type of heating in making frosting...have I been wrong all these years?

The CI recipe is very good too, but a lot of people said it just tasted like butter to them. I liked it though, but preferred the boiled frosting, it reminded me of the inside of a devil dog.

which reminded me that this recipe has been on my list forever, but I think I made the frosting, or something similar when making the Tuxedo cake Becca blogged about.
