Hi,

Kenji actually "went of the wagon" (no vodka) for his Food Lab article on Serious Eats about the science and technique for pie crust. This is compelling and is a must read. There is also a wonderful comment about ownership of recipes which reminds me of Rock-n-Roll songs in the 1950's. Yes, I am ancient.

Not that unusual. I've signed NDA's and non-compete agreements signed over numerous patents and tons of other IP. The holder of those is always free to publish, etc as they please but I stay mum. When I worked in security, I knew guys who wrote reports but weren't allowed to see them after since they had been classified at too high of a level, despite them being the author. Crazy stuff.

Also, fantastic article. I knew the fat-coating-flour had to be wrong (it was observably so), but don't have the knowledge to workup the mechanism etc that it really was, nor workup an alternative. Very nice work. I must try it.

Kenji does it again!

I have been thinking about using the Beaterblade on my KA mixer to cut the fat into the flour for pie crusts. I noticed that when I added butter to a buttercream the effect of the rubber blade against the side of the bowl mimicked fraissage. Do any of you make pie crust in the mixer (with or w/o a Beaterblade)? I'll probably try it anyway, what's the worst that could happen?

I think the idea of fraisage with a soft spatula is inspired. No heat and the same motion.

Like Paul, I've signed a number of NDAs and non-competes in my career, so find it not at all unusual Kenji can't write about the CI recipe. Frankly, BCP would be stupid to do it any other way.

Many times these are time limited and expire after x amount of time. Wonder if this is so for Kenji, or if CK has to be deceased (not to be morbid or wish it upon him), just thinkin'.
