What a great thread and so timely for moi! We've been going around with pastry crusts recently. I used a variation of CI's or rather a meshing of CI's and Smitten Kitchen 102's guide. It took some doing to convince my budding chef that cold was very necessary and we endured a few sandy crusts before he started to "get" it. The last crust, however, was a bit tough. And reading Kenji's article explains what happened.
So, when we get a food processor, the updated version of pie crust is high on my list of to do's.
