I need a recipe for just about any kind of cupcake to take to the school's international day for the American booth where they will be selling cupcakes and margaritas (gotta love Europe, at Christmas the boy scouts sell mulled wine at the local market). The woman who runs the booth says anything sells as long as it has frosting and sprinkles. She suggested a mix but I just can't.

I can't remember ever making a proper cupcake and then Amy said you just can't take a cake and put it in a cup which flustered me so PLEASE do you have a cupcake recipe for me that goes with icing and sprinkles?

You can use a cake recipe you like. Add about 1/4 teaspoon (maybe 2 grams?) of baking soda, and bake about 25 degrees F higher. They need the extra boost to rise nicely before they set.

and in my oven they only bake 1 tray at a time properly. if I do 2 trays they are FLAT.

If you go to the Food Network and search Ina Garten's Coconut Cupcakes, you will get the recipe for the best cupcake I ever made. Everyone requests them over and over again.

FWIW, I found this via google; from Magnolia bakery in NYC. :)

Magnolia Bakery Vanilla Vanilla Cupcakes
Uk Measurements

Ingredients:
Yield:
12 cupcakes

FOR 1 DOZEN CUPCAKES
• 168 g self-rising flour
• 140 g all-purpose flour
• 112 g unsalted butter, softened
• 224 g sugar
• 2 large eggs, at room temperature
• 125 ml milk
• 1/2 teaspoon vanilla extract

Directions:
Prep Time: 40 mins
Total Time: 1 1/4 hr

Preheat oven to 180 degrees celsius.

Line one 12-cup muffin tin with cupcake papers.
3 
In a small bowl, combine the flours. Set aside.
4 
In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes.
5 
Add the eggs, one at a time, beating well after each addition. Add the dry ingredients in three parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not overbeat.
6 
Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Carefully spoon the batter into the cupcake liners, filling them about three-quarters full.
7 
Bake for 20?25 minutes, or until a cake tester inserted in the center of the cupcake comes out clean.
8
 Cool the cupcakes in the tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing. Ice the cupcakes with either Vanilla Buttercream or Chocolate Buttercream.
9 
NOTE: Take your time to make your cupcakes rather than rushing them and you will have the perfect cupcake. After 15 minutes, if your oven cooks slightly unevenly, rotate the muffin tin to ensure one lot aren't burnt and the others aren't undercooked.

Something uncomplicated chocolate, yellow, maybe red velvet. No cream cheese frosting as they will be out all day. The coconut one looks fantastic but I would have to make my own sweetened coconut and I am not going to that much trouble for that event! I will someday though, I love coconut. The vanilla ones look good to but I can't get self rising or cake flour but I could do the subs.

My favorite chocolate cupcakes are the CI recipe with the chocolate ganache middle. The ultimate cupcake or something like that. I leave out the ganache as I don't care for it, the the chocolate cupcakes are excellent, and can be mixed up fast!!! Topped with a heap of vanilla buttercream and sprinkles they would be great.

These are the cupcakes Trinket was referring to...I made them and they were really good...the chocolate truffle that was suppose to be in the middle melted into the cupcake...not sure what went wrong...but they were really good...
