Yes, I too would like to know where you stand on chili verde - in the middle, on the edge, or outside the farthest splash marks? Personally, I'd be sitting beside it with my crying towel and a spoon! :o

Usually, I agree, but did you try the Enchiladas Verdes? I switched out the corn for flour tortillas, and used pepper jack, rather than jack. Was really very good.

Out of curiousity, where do you stand on Chile Verde? My personal favorite....

I love pretty much all things made with green chilies. Green chilies are not found very much around here, I hunt them down with vigor when in New Mexico. I will fly into Albuquerque on the 14th, promply go to the Owl Cafe for a large bowl of beans with green chilies, flour tortilla, & a green chili cheese burger, before proceeding to Gallup to ride a snowcat to the top of a 9400' mountain to look at a radar site...memories of chilies will be most helpful!

The Ecklund hotel in Clayton, NM. has a flat green chile chicken enchilada with a fried egg on top that I dream about!!

I do like Chilie Verde!!!

Frank,

You could add some pork & chicken to this, if you liked:

Frank,

Yeah, if you can get your hands on some fresh hatch or green New Mexico chiles, it would be much better.
