Post subject:  banana peppers

Any one have any recipes for banana peppers? I just harvested a boatload with many more on the way and no idea what to do with them. The peppers are much hotter than I expected and have a different kind of heat than what I'm used to, and trust me, I love hot and spicy. But they were almost too hot when I added raw rings to gazpacho.

I love those with a stuffing of Italian sausage, egg, breadcrumbs and fresh parsley. Put some parm on top and then pop them in the oven. They are also good to pickle with veggies. Or fried with zucchini and eggs. I wish I could get those!

Sorry I don't have any real recipes, I think it is our official family pepper so I just wing what the old folks made.

I didn't research it, but I think you could can them. (You Yankees! I always think they are soo mild :P )

Dilled Banana Peppers are awesome. My great Aunt used to dill everything and I had to have the recipe and I made these years ago.

Wear gloves when you clean them!!!!!!

Nancy,

Banana peppers are also excellent in salsa with fruit, like a mango salsa, cucumber salsa, or peach salsa. Combine them with all those cucumbers you have.

They're best roasted and peeled, but that's true of most peppers.

I made a BP mustard relish (googled and got the recipe from all recipes) and it's really delicious. With so many more peppers to harvest looks like I'll be able try all your other suggestions and will report back as I do.

Who knew that one plant would be so prolific! Loving this challenge and your help, as always. :D
