 Post subject: what to do with so many cucumbers?

I picked 5 cukes 2 weeks ago, 7 last week, 3 tonight, with the probability of another 5-7 before the end of this weekend and loads and loads happily growing. I planted them in a new spot and that with the weather has apparently been a huge hit for them. Problem is my creativity with cukes has slammed to a halt. I make a great cucumber salad (but don't want to OD), an ok cuke soup (we're not huge fans of cold soup and I'm lactose intolerant), made raita, and tried a cuke/radish raita that was a disaster.

I'm stymied with what to do with the rest. HELP please?

My father made this "pickled cucumber" concotion which is great....I don't have a recipe but just "wing" it to taste.

Peel, slice thin (and seed if you want) a few cukes. Thinly slice a red onion ( or two depending on size of onions and number of cukes)and add to the sliced cukes. Cover with plain white vinegar, add a few teaspoons of sugar, salt and plenty of fresh ground pepper. cover and allow to sit in refrigerator for 24 hours....but the longer, the better. We put these in salads, on burgers or just used them as a side dish. As we used the cukes and onions, we just added more to the jar and topped it with more of the other ingrediants as needed.

How do you make your cumcumber salad? We call this basque salad, because that's where I first had it: thinly sliced cucumbers, tomatoes, red onion, and peppers (the last time I made it, I sliced mini peppers into rings), marinate in red wine and vinegar dressing. It's delicious and pretty.

Cukes seeded and sliced, sliced green onions, equal parts sugar and white vinegar, a sprinkle of crushed red pepper. Doesn't keep well so I make alost daily.

My cuke salad is pretty basic but mighty tasty: salted and drained cukes, vidalia, little bit of olive oil, little bit more of balsamic, dill, splenda (if necessary) and let it sit for minimum 2 hours. Good for a week. HUGE hit always but gets boring week after week after week. Wish we could find a way to freeze these delicious home-grown cukes!

Cucumbers sliced with some dill and sour cream is always good.

Tzatziki. Stuffed cucumbers (yes, really) ... stuff them with rice salad, bulgur-tomato-paste salad, whipped feta cheese, etc. High Tea cucumber sandwiches. Greek or Israeli salad. Japanese cucumber salad. Poached salmon covered in cucumber scales. Cold cucumber soup. Havarti, cucumber and cayenne sandwiches. Cucumber-mango-habanero salsa. Cucumber-heavy gazpacho.
