He is amazing and thanks for sharing this. I had stumbled on a different way to cook pasta recently becasue I just wanted a single serving with no leftovers, so I switched to a much smaller pot ....cannot wait to try Kenji's method and turn off the heat. ilene

I've been cooking pasta for me (1) in a saucepan for years. I was just too lazy to pull out a bigger pot and unload all the saucepan lids that I keep inside of it.

Me too. I've been using a small-ish pot for years and no complaints on my end.
Great article. He's got a fantastic, or rather, self-deprecating (sp?) sense of humor. Right up my alley
