All,
I made this the other night to go with souvlaki, and it was so good I thought I should write it down and share the recipe:
8oz strained Greek Yogurt (Fage brand recommended) 2 tbs Kalamata olive oil 1 tsp salt 1 tbs minced fresh oregano or marjoram 1 tbs minced fresh mint (pref. peppermint) 1 tbs minced fresh thyme
Mix all ingredients together. Allow to sit for at least 30 minutes, and preferably overnight, to develop flavor. Use as a spread on pita or lavash bread, or even on bagels.

Thanks for sharing! I can even get that yogurt (also in low and non-fat which is quite good). Is kalamata olive oil much different than other (good quality, natch) olive oil?

Mary,
Not that different. It has a bit more of an "edge" to it, but in this recipe any virgin olive oil should be equivalent.
