I do but it isn't "from scratch". Do you still want it?

At its most basic, creamed spinach is simply bechamel with wilted spinach. Make your best recipe of each and combine.

Then just add a hint of nutmeg and you will have a hit!

Todd, Ina made creamed spinach on her show last week, here's a link to a ton of recipes from food network. I don't see Ina's there, but Tyler Florence has one that looks good.

The best C S I ever had was at Two Sisters Restauant in New Orleans. Really good and I'm not that wild about it.

Laurie,
The first CS I ever had was at the Gumbo Pot in New Orleans. It was very good. Thanks for the links. I will check them out. I bought my Redskins last night. They are sized as "B's", but they are still a little big to roast whole. I will cut them in half or quarters. I can never find the smaller potatoes that you can cook whole. Up in Kalkaska there is the Cherry Street Market. The last time I was there they sold the small potatos that you could cook whole.

Todd, Next summer you need to come up and I'll take you to Walravens Fruit Market. It's only a couple miles from my house, they have then and lots of great produce. They buy from local growers all summer long. They open in May and close on Nov. 15th.
