| Post subject: | Eggplant Parmesan recipe |
I can’t seem to find my favorite recipe for Eggplant Parmesan. I roasted the eggplant and used a very simple marinara with fresh mozzarella....Probably won’t be difficult to reconstruct, but it’s driving me crazy not to find my recipe. Does anyone have a version they love? |

One of the hardcore cooking shows did eggplant parmesan last year. I don't remember which, though: Serious Eats, ATK ??? |

I basically can wing it, but am just frustrated I can’t find my recipe and was hoping someone had a good version to review. I thought mine had come from NYT, but I can’t find one there similar to the one I loved. |

Sometimes having so many recipes to look through is more of a pain than a pleasure. I’ve been pasting the ones I like into my notes app just to make them easier to find. |
