Apparently LV and Reno absolutely rock this dish - 24 hour line ups!!

Google results are all over the place re: techniques, ingredients, etc. - you know, the little details...

Serious Eats, CI, and the rest come up with big ZEROs.

Can you ‘tell me where to go’ :lol: :roll:

"seafood pan roast" isn't that specific; can you give more detail? Maybe photos?

The stuff that Google turns up seems unified in being criticized as the wrong thing.

I'd say you have a challenge ahead, from the article:

Agree.

I have never worked in a commercial kitchen and don’t know what a steam kettle is...

Readers here haven’t exactly flooded the place with suggestions :o

Lastly, we don’t go to Vegas any more so I can’t stop by. If we ever go, I did a half day at Guy Savoy so I’m sure I could work my contacts enough. It’s really difficult without some frame of reference for taste...

We had a member who loved/loves LV but I don’t remember his name - loves motorcycles and was working as chef at a retirement home I believe..... :?: :?: :?:

Todd Hart - used to love LV and worked in a retirement home in Michigan. I think he still posts on the facebook group.

Finally found something that sounds very close - do read the comments. Please note that this is a recipe for one (WHAT?!) Anyway I'll start by doubling it :o :roll: :lol:

OYSTER BAR PAN ROAST

READY IN: 30mins SERVES: 1

INGREDIENTS

1⁄4 teaspoon butter
1⁄4 teaspoon salt
1⁄4 teaspoon white pepper
1⁄4 teaspoon celery seed
1⁄4 teaspoon paprika
1⁄4 teaspoon lemon juice
1⁄4 teaspoon Worcestershire sauce
1 dash Tabasco sauce
2 tablespoons white wine
1 tablespoon seafood cocktail sauce
1⁄4 cup clam juice
6 ounces shrimp, peeled and deveined
3⁄4 cup half-and-half
1 tablespoon butter

DIRECTIONS
• In large pan over medium heat, melt butter. Add salt, white pepper, celery seed, paprika, lemon juice, Worcestershire sauce, Tabasco, white wine, cocktail sauce and clam juice.
• Add seafood, stir and bring to a full boil. Add half-and-half and return contents of pan to boil.
• Place butter in bottom of deep bowl, pour in pan roast, sprinkle with paprika and serve.

You know, I'm pretty sure that there's an older, Cajun/Creole, name for something exactly like that recipe.

It's kinda Shrimp Creole without the tomatoes, but there may be a recipe which is exactly it.
