I just harvested about 80 scapes today, and I am going to make a bunch of the pesto, and freeze it. I won't put the cheese in - I prefer that added fresh, plus, that way I can use different ones.

Sorry to hear that, Fuzzy! I have never had squirrels go after my garlic, and I have trouble with them here. Unless you just have one that has developed a taste for garlic. ;) Or, quite possibly, a different species than mine.

Last year I lost about 90% of one of my varieties of garlic (metechi) to extreme cold, while the other two were not bothered by it. First time this ever happened to me, but it was also the coldest it had been in over 20 years.

I have been making my pesto with the cheese and then freezing. Thanks for the idea of waiting to add the cheese. I am also thinking about waiting to add the nuts and just freezing the scapes and the oil.

That's what I used to do with basil, Todd, before I started growing it 365 days a year. I'd just grind it up with the oil, and freeze it, then I could use it in many ways. Maybe the oil and scapes could be used in different ways, as well.
