Post subject:  Sicilian Baked Sausage

This is one of those recipes where the sum is so much greater than its parts.
I love simple one pot recipes and this is one of my all time favorites that I've made many times.  It is so much better than it would seem.
I've made it for good friends and always get raves.

Sounds similar to some delicious recipes that I make, except no garlic, and dry instead of fresh basil.

There's no garlic or fresh basil in that recipe.

That's what I was trying to say - there is no garlic, and it has dry, not fresh basil, while the similar recipes I have made had garlic and fresh basil. Easy to make in the Instant Pot!

alstro, I'd start with some olive oil, sauté the onions and peppers, adding some garlic at the end, then add the tomatoes, and bring to a boil, and add the sausages and potatoes, and "off" it. Then set it for 15 min. manual. The time building the pressure up, then letting it reduce naturally, is just right for sausages that I've cooked. As with similar dishes, I'd add some fresh basil at the end.

Alina, I've done it both ways, but when removed from the casings, and browned, it doesn't have as much cooking left - more just to blend the flavors. And to cook potatoes, in this recipe.

I like it with the sausages sliced into about thirds. It makes a more attractive dish that way and this way everything is about the same size and cooks up in the same time.
(I also like to add a few carrots to the dish).
