Emilie,
you posted a zucchini bread recipe last year (if I remember correctly) and I made it and it was fantastic. I lost the recipe when my LC software went haywire and I restored the backup that was a few months old.
Could be post the recipe again, I'm dying to make it!

Hey folks, sorry I'm just seeing this. So glad you liked that recipe, Linda! I have several bags of shredded zucchini from this summer in the freezer, at the ready for when the craving hits for that yummy bread. Now that I think about it, I might need to thaw one of those tomorrow... ;)

And actually I discovered another similar gem recently when I tried a new banana bread/muffin recipe. I had made many over the years but none of them ever wowed me. And CI's most recent version with the sliced bananas on top definitely didn't hit the mark in my world. Then one day when I had some near black bananas, rather than throwing them out or leaving them to start a fruit fly colony on the counter, (I always forget about them if I freeze them), I found this one from BEB and its lack of fussiness was enough for me to give it a try. They are simple but really good, just like that zucchini bread.

I typically make them in an 8-well mini-loaf pan (major score at the W-S outlet long ago, I wish I'd bought 2 more). But they're great in muffin pans and also in larger loaves. Most of the time I keep them in the freezer and just thaw one at a time when no one else is around to mooch any. I'm so nice.
