Does anyone here have an old Joy of Cooking book? I am not at home and need the recipe for the Chocolate Sauce Cockaigne from it. I believe it is the one made with evaporated milk. It is one of the best I have ever made and so easy, but I can't really remember all the ingredients. My granddaughter wants an ice cream bar for her birthday so I need this! I am also looking for a caramel sauce recipe if anyone has one they love. I am planning on using the one at CI unless I find one someone has experience with.

1973 edition:

Melt in the top of a double boiler, over, not in, hot water: 3 ounces chocolate.

Combine, then stir into the chocolate: 1 well beaten egg, 3/4 cup evaporated milk, and 1 cup sugar.

Cook for about 20 minutes. Remove from heat and beat with a rotary beater for one minute or until well blended. Stir in: one teaspoon vanilla.

Cool sauce before using. If tightly covered and placed in refrigerator. will keep for several days.

I found it quite interesting how 'general' the instructions were compared to how it would be sooo specific nowadays :lol: This was my 'bible' when I graduated from Betty... :roll: :shock:

Also, they didn't really test the recipes very much. Some of the early editions gave recipes that could kill you.

That could be a very funny thread; however, I never experienced one failure and my SUCCESS with their chocolate mousse blazed a trail for me in compliments :oops: :P :roll: :lol:
