I have about 2 pounds of Havarti Cheese and I have no idea what to use it for besides just eating it plain. Any suggestions?

I just checked out Pinterest and there are some really good suggestions there. Nice pictures as well.

David's Dilled Havarti Spread from Moosewood. I'll see if I can have the recipe in word and will post. It's a summer fav of ours.

****David's Dilled Havarti Spread

Recipe By : Moosewood Restaurant New Classics
Serving Size : 10
Preparation Time :0:10

Ingredients -- Preparation
--------
1 cup shredded dilled havarti cheese* -- lightly packed
1/4 cup minced scallions
2 tablespoons fresh dill
1/3 cup mayonnaise

In a bowl mix together all ingredients. In a sandwich try with any of the following: sliced radishes, cucumbers and tomatoes; roasted red peppers; pickles sprouts, shredded lettuce, or spicy mustard. We had it on a baguette with artichoke hearts and sliced tomatoes. Simply divine!!!!

*Can sub regular havarti and add more dill.

Served on NYT Bread with avocado and tomato. Delicious, delicious, delicious.

I felt creative last night, so I took a pie crust and filled half of it with fresh mushrooms, roasted red pepper, artichoke hearts, banana pepper rings, shaved ham and Havarti cheese. I folded the crust and sealed the edges. My mom thought the crust needed to have some butter on it, so she brushed the top with butter to help it brown. It took about 20 minutes or so to bake at 350ยบ. It was delicious.

Nancy, I think I am going to try your recipe. My mom loves dill, so she should enjoy the spread.

Todd, I'd shred whatever you aren't using for dip or sandwiches, freeze on a cookie sheet and then bag when frozen. Then you can add as the mood strikes to quiche, mac and cheese or biscuits.

I like it in sandwiches. Especially turkey cranberry ones and turkey, roasted red pepper, and chipotle mayo ones.
