Post subject: | Veggie Burger Recipes? |
Folks, I know that CI had one a few years ago; anybody try it? Any other suggestions? I ask because a local restaurantier is thinking of adding a veggie burger to the menu on weekends, and she's looking for recipe suggestions. |

The CI one was very fussy - used way too many ingredients/bowls, fell apart and wasn't too tasty. NG IMO. |

Cook's Illustrated Ultimate Veggie Burger from 2005 bears a striking [family?] resemblance to Kenji's. The CI burger is time consuming, tasty and filled with mushrooms, lentils, leeks, onions, bulger, cashews and PANKO. I think I recall being less than thrilled with the quality of the thawed product in the second and third round. Recipe upon request. I am not sure why multiple cups of panko are needed in veggie burgers, so I have been looking at this Chickpea and Veggie Burger that really is mostly veggies. OTOH, I may just make falafel. |

This one is a very nice mushroom, spinach and almond patty from the NYTimes. With the cost of almonds these days it might not be cost effective for a restaurant, but I have made them several times. Personally, I think that trying to mimic a burger is the wrong approach. You can make fritters or pancakes from just about any grain+chopped vegetable+binders combo and serve them with a sauce and skip the the bun. This is a great way to utilize leftovers and keep the menu changing. |

Given that the restaurant is in SF, she can't copy the Plant Cafe recipe, even though they are good. I'll forward her Becky's suggestion. |

My friend made these and I thought they were delicious if a tad on the crumbly side: Vegan Veggie Burgers 1/2 cup onion, diced 1 large garlic clove, minced 2 1/2 tablespoons ground flax, mixed with 1/2 cup warm water 1 cup oats processed to flour 1/2 cup bread crumbs 1 cup grated carrots 1 cup cooked black beans, rinsed and mashed or pureed 1/4 cup parsley, chopped 1/3 cup almonds, chopped 1/2 cup sunflower seeds 1 tablespoon extra virgin olive oil 1 tablespoon soy sauce 1 1/2 teaspoons chili powder 1 teaspoon groun cumin 1 tsp. oregano Kosher salt and black pepper, to taste (I used about 1/2 tsp kosher salt) Mix together and form into patties. Makes about 10 burgers. |
