Hey:

I've still got a ton of heirloom & organic tomatoes from the market which need to be used in the next 2 days. Can anyone recommend a recipe which uses lots of fresh tomatoes, but:

  • isn't pasta
  • isn't gazpacho
  • and is vegetarian or fish?

Just looking for ideas here, not a complete recipe.

Tomato Pie?
Fish baked on a bed of tomatoes? I've only ever done it with halved grape tomatoes, but it might work with chopped large ones, too.
Tomato Salads? I know you didn't want recipes, but I've been making a recipe from CI every summer for 10 years or so. It has olives, tomatoes, capers, and tuna.

I wish I had your problem. This is making me hungry.

Tomatoes, cucumbers, onion, olive oil, salt, pepper and Feta cheese. My mom and I eat this a lot this time of year.

The tomato tarte tatin I made was really excellent. Basically, roast as you wish then bake under some puff pastry and flip. I put shallots and garlic in mine.

Oh, Dorie's French book does have an amazing tomato mustard tart. I need to make with our tomatoes.

I mixed panko with some parm cheese and sprinkled it over the tomatoes before tipping with the pastry.
