I just made some tabbouleh the other day, which made good use of a bunch of all the tomatoes, parsley, and mint I am getting this season. And I have made many variations on the pasta with fresh tomato sauce, which uses 24 oz diced tomatoes, 4 cloves minced garlic, 6 tb olive oil, and a large handful of basil, chopped up. Normally one lb of pasta is cooked and drained, and mixed with this while hot, but I have also made this with a mix of lentils - usually chana dal - and various grains. The most recent mix I made I put in some sprouted black barley - about 1/2 c before sprouting - to 12 oz chana dal, and 1/4 c Israeli cous cous (I know, this is pasta, but you can omit this!), and also added some kalamata olives and anchovies to the tomato mix, and it was fantastic. I have almost 3 lbs of tomato chunks in the fridge from a bunch of split tomatoes that I salvaged useable pieces from, and I will be making a large batch of something similar tomorrow.

Shakshuska, or a variant spelling thereof, is a middle eastern dish of eggs cooked in a spicy tomato sauce.

Panzanella, or CI's puff pasty tomato tart. Maybe do the roasted tomato version. I also like shrimp cooked with tomatoes and feta.

Ok, maybe not the prettiest thing in the word, but man was it tasty. I used Early Girl tomatoes from Santa Cruz, and (as you can see) onions.
