Just returned from a road trip to Normandy France with a few extra pounds and a tart tatin pan. I would like to do a savory version and have seen some recipes but wondered if any of you have tried to do one. Also any variations of the classic apple.

Just about any stone fruit can be used in a tart tatin. I don't know why the idea of making a savory never occurred to me, the person who makes savory bread puddings and olive oil gelato.

I have eaten them in France. Really nice with a salad, wine and France.

I have made them with pears, peaches, and blueberries/raspberries (3 separate ones).

I ended up looking at a bunch of recipes and then improvising. I got a bunch of different tomatoes and roasted them with shallots, garlic, rosemary, olive oil and honey. I put the tomatoes and shallots on the pan and topped it with panko mixed with the roasted garlic and rosemary parmesan and then topped with puff pastry. So good that I am going to have an awful cramp from repeatedly patting myself on the back.

"A"glass of wine, eh? I think I over medicated. Over ate as well. I started out wanting to make something small so we could serve the cheese we bought and ended up making a bunch of small things. It was great though, we had a couple friends over and sat outside eating and drinking for hours. I love summer.
