Also, in the spinach/date recipe the onions and dates are marinated in vinegar, it does nice things.

Oh, also here's one we haven't been able to enjoy in a while because of the tomato famine:

Corn, snap pea, cherry tomato, mozzarella, and balsamic salad.

Mary,

I just made that Sweet Potato and Black Bean salad, and it was delicious! I made some minor changes to it - I used toasted cumin and coriander seed (I always have that around for Indian food), so I roasted the SPs without them - just salt and red pepper - for 15 min., then I tossed them with those spices and roasted another 5 min., and they came out great. I also used a bunch of chopped chives, rather than scallions, which I usually do, since the scallions or regular onions get that "old onion" flavor when leftover. Plus, I always have huge amounts of chives, starting in early spring.

This time of year, I enjoy a salad of cubed watermelon, basil, and Jarlsburg Swiss cheese, with a oil and lemon dressing. No recipe, I just make it up as I go.

I just returned from dinner @ a Bistro (Coxsackie, NY) where I had an absolutely fantastic strawberry and goat cheese salad on baby greens /arugula/topped with walnuts and dressed with a strawberry vinaigrette. Sooo very, very delicious - I'm going to try to recreate this one at home.
