Post subject:  scrambled eggs & herbs????

I'm taking the lazy way out with all of you. Can you recommend any herbs to add to scrambled eggs? Obviously, I could do a simple but long process of trial-and-error but, hey!, that's why you're here!

Dill, oregano, and savory didn't do it - for me. Fennel seems like a possibility...

Anyway, I'm primarily interested in herbs but I realize it may require marrying with various types of onions, garlic, certain cheeses, etc.

I like to fry up some zucchini and onions and hot peppers and then scramble some eggs and basil and maybe a bit of parm. Thyme is also nice. Are chives an herb?

I like tarragon in scrambled eggs as far as herbs. As far as other things go I am partial to sriracha when I want heat.

When tarragon is in season, I frequently use it in scrambled eggs. For dried herb applications, I usually use Penzey's Pasta Sprinkle mixture of basil, oregano, thyme, and garlic.

Tarragon all the way, or fennel (the fronds, not the seeds)

Chives and tarragon. If there is no tarragon, then parsley is actually quite nice. I sometimes sneak a little thyme in there.

For creamy scramble, topping with basil chiffonade is nice (as is bits of crispy bacon, though that is not a herb). I don't think I'd use tarragon and basil though I've not tried it. Seems wrong.

Also in the not-a-herb, a really good olive oil really goes well with eggs.

I think I'll have to try fennel fronds someday, that sounds like a winner.

Tarragon, then again I tend to put tarragon on everything. I am so happy it came back. It looked for a while like it was a goner, but its thriving now. I like chives with it, especially if I am adding cheese. Of course you could do it the Cuban way and add diced cooked potatoes, diced bell peppers, diced ham and a bit of tomato sauce.

Oh and ever since I read Nero Wolfe mysteries as a teenager, I've added paprika to my scrambled eggs.

Alina made reference to Nero Wolfe and scrambled eggs. If you're a Wolfe fan you'd know that he is a scrambled egg fanatic and I thought for fun that I'd share one of his quotes on how to cook scrambled eggs. Also, besides paprika, another time he uses tarragon wine vinegar:

"The client had admitted to Wolfe, in my hearing, that she didn't know how to scramble eggs...He had admitted to her, in my hearing, that forty was more minutes than you could expect a housewife to spend exclusively on scrambled eggs, but he maintained that it was impossible to do it to perfection in less with each and every particle exquisitely firm, soft, and moist"
