Even if I'm EST this week, that's too early for me.

Tunaroe:

First, try just roasting them (400F for 1 hour), split them, and season. I like butter and chili powder, but many seasoning combinations work.

I also do sweet potato latkes, but if fries are out, those are certainly out.
